Bavette steak, also known as flap steak, comes from the sirloin primal of the animal near the flank. The Bavette has great marbling and a tender texture. This uncommon cut is hard to find since it only makes up a couple pounds of the animal, but if you can get your hands on it, it's a great substitute for the flank steak.

The Bavette is a versatile cut that can be prepared a variety of ways. Most commonly, it’s seasoned with a dry rub or just simply salt and pepper. It’s also great for marinades as the openness of its fibers really allows the beef to soak up seasoning and marinade.
